Ingredients

Wet Ingredients:

  • 2 tablespoons unsalted butter melted
  • ½ cup brown sugar

Dry Ingredients:

  • 1 teaspoon salt
  • 4 cups all-purpose flour

Optional Add-Ins:

  • 1 teaspoon cinnamon
  • ½ cup chopped walnuts or pecans
  • 1 teaspoon blueberry powder for a Maine touch

Instructions

1. Mixing:

  • Pour boiling water over the oats in a large mixing bowl. Let sit for 15 minutes.
  • Dissolve yeast in warm water and let sit until foamy.

2. Combining Ingredients:

  • Mix the molasses, melted butter, and brown sugar into the yeast mixture.
  • Add the soaked oats and gradually mix in the flour to form a soft dough.

3. Kneading & Resting:

  • Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let rise for 1-1.5 hours.

4. Shaping & Baking:

  • Punch down the dough, shape it into a loaf, and place it in a greased 9x5-inch pan.
  • Cover and let it rise for another 30-45 minutes.
  • Bake in a preheated 375°F (190°C) oven for 30-35 minutes.

5. Cooling:

  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
