beef sirloin or tenderloin
thinly sliced

For the Vegetables:

Instructions
Cooking the Beef:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the beef slices and sear for 2–3 minutes on each side until browned.
Remove the beef from the skillet and set aside.
Sautéing the Vegetables:
In the same skillet, heat the remaining olive oil.
Add the onion, mushrooms, and garlic, and sauté for 5–6 minutes until softened.
Making the Sauce:
Sprinkle the flour over the vegetables and stir until well-coated.
Gradually add the beef broth while stirring constantly.
Bring the mixture to a simmer, then stir in the sour cream and Dijon mustard.
Season with salt and pepper to taste.
Combining and Serving:
Return the seared beef to the skillet and simmer for 3–4 minutes until heated through.
Serve the stroganoff over cooked egg noodles.
Garnish with chopped fresh parsley and enjoy!
