Ingredients

For the Beef:

  • 1 lb beef sirloin or tenderloin thinly sliced
  • 2 tablespoons olive oil

For the Vegetables:

  • 1 medium onion finely chopped
  • 2 cups mushrooms sliced
  • 2 cloves garlic minced

For the Sauce:

  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

For Serving:

  • 12 oz egg noodles cooked according to package instructions
  • Fresh parsley chopped (for garnish)

Instructions

Cooking the Beef:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the beef slices and sear for 2–3 minutes on each side until browned.
  • Remove the beef from the skillet and set aside.

Sautéing the Vegetables:

  • In the same skillet, heat the remaining olive oil.
  • Add the onion, mushrooms, and garlic, and sauté for 5–6 minutes until softened.

Making the Sauce:

  • Sprinkle the flour over the vegetables and stir until well-coated.
  • Gradually add the beef broth while stirring constantly.
  • Bring the mixture to a simmer, then stir in the sour cream and Dijon mustard.
  • Season with salt and pepper to taste.

Combining and Serving:

  • Return the seared beef to the skillet and simmer for 3–4 minutes until heated through.
  • Serve the stroganoff over cooked egg noodles.
  • Garnish with chopped fresh parsley and enjoy!
