Ingredients

  • 4 overripe bananas Key for moisture and flavor.
  • ½ cup brown sugar
  • ½ cup coconut oil
  • 1.5 cups wholemeal flour
  • 1.5 tsp baking powder
  • ½ tsp baking soda
  • 1 Pinch of salt
  • Cinnamon powder optional

Instructions

1) Preheat the Oven and Prepare the Pan

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan with a bit of coconut oil or line it with parchment paper to prevent sticking.

2) Mash the Bananas

  • Peel 4 overripe bananas and place them in a large mixing bowl.
  • Use a fork or potato masher to smash the bananas until smooth. Some small lumps are fine for texture.

3) Mix the Wet Ingredients

  • Add ½ cup brown sugar and ½ cup coconut oil to the mashed bananas.
  • Stir well until the mixture is combined and smooth.

4) Combine the Dry Ingredients

  • In a separate bowl, whisk together: 1.5 cups wholemeal flour, 1.5 tsp baking powder, ½ tsp baking soda, 1 pinch of salt, Cinnamon powder (if using).
  • Gradually add the dry mixture to the wet ingredients.
  • Stir until just combined. Avoid overmixing to keep the bread light and fluffy.

5) Pour and Bake

  • Pour the batter into the prepared loaf pan.
  • Smooth the top with a spatula.
  • Bake in the preheated oven for 33 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve

  • Once baked, remove the bread from the oven and let it cool in the pan for 10 minutes.
  • Transfer it to a wire rack to cool completely before slicing.
